Lid gaskets, the deadweight valve and the safety relief valve all sit on the daily and quarterly checklist, and a fryer that will not build or release pressure is a stop, not a workaround. ### The control remembers errors The C1000 and C8000 controls keep an E-LOG of the last ten errors with the time each happened, in Info Mode. Reading that log tells us whether an E-code on the day of the visit is new or has been coming back for a week. ### A red reset behind the door A separate high limit watches the shortening and cuts the heat if it overheats. It must be reset by hand with a red button under the control panel once the oil has cooled, and a limit that trips twice points at the temperature control rather than the limit. ### Filtering is part of the design Henny Penny builds filtration into its fryers and asks for the shortening to be filtered every few cook cycles. Evolution Elite open fryers add automatic oil top-off, which keeps the level right but also means a top-off pump and reservoir to service. Parts Temperature probes, high limits, contactors, drain microswitches and ignition modules are matched to the fryer's model and serial number. Control and I/O boards are specific to the control generation, so we note which control the fryer carries before ordering. Repair or replace A Henny Penny fryer with a sound vat is nearly always worth repairing when a probe, limit, contactor or board fails.
