Middleby Marshall of Elgin, Illinois, makes conveyor ovens, and its infrared lines, the CTX DZ series and the LongWave LW26 and LW33, move sandwiches, proteins, sides and baked goods through heat zones on a timed belt. On this site we cover those infrared conveyors in kitchens that cook far more than pizza, where a message on the touch screen usually names the zone, belt or board involved. We work on CTX DZ26T, DZ33T and DZ55T and LongWave LW26 and LW33 infrared conveyors, stacked or single. PS-series and X-Series impingement conveyors belong to the pizza oven site. ### Heat that travels as infrared CTX and LongWave ovens use panels above and below the belt that give off long-wave infrared, which warms the food surface rather than the air. A zone that runs cold shows up as a pale stripe on the product, so we test each zone separately. ### Belt speed is cook time On a conveyor oven the minutes on the screen are how long the belt takes to carry food through. Motor controls MC1 and MC2 run the front and rear belts on two-lane CTX ovens and report their own messages. ### Two independent heat watchdogs Besides the main I/O board, the CTX has a limit board that can shut heat down on its own above 1075°F. When both boards complain, overheating is real rather than a sensor glitch. ### A self-clean at 900°F The DZ series runs a one-hour cleaning cycle at 900°F and then returns to its previous mode instead of switching off. Staff need to know that before they reach for the belt afterward. Parts Infrared panels, zone probes, motor controls, I/O and limit boards are ordered by the oven serial number, since these ovens are voltage specific. The magnetic fan filter is a routine part to keep on hand. Repair or replace Most infrared conveyor problems, such as a probe, a panel, a motor control or a fan, are worth repairing on a sound frame. A stack with several failed panels and a worn belt drive on an older oven is where a new oven may be the better spend. Book your Middleby Marshall visit ## What we are called out for. Yes. Its infrared conveyors are sold for cooking, baking, searing and roasting in high-volume kitchens, and the CTX is used for sandwiches, proteins and sides. ### How often should the fan filter on a CTX oven be cleaned? Weekly, according to the manual: shake it out if dusty, or wash it with dish soap if greasy, and let it dry before reinstalling. ### Why does my CTX oven stay hot after the clean cycle? The cycle runs at 900°F for an hour and then returns to the last cooking mode rather than turning off. Switch the oven off yourself if you want it to cool. ### Can I stack Middleby Marshall infrared ovens? The manuals show single, double and triple stacks, and the DZ33T, DZ55T and LW33 can go four high with the right stand. --- **[Read on the site: Middleby Marshall Restaurant Equipment Repair](https://commercialappliancerepair.center/brands/middleby-marshall/)** **[Book a visit with CommercialApplianceRepair.center](https://commercialappliancerepair.center/schedule/)**
