Often the cause sits outside the unit, such as a door left open during a delivery, a coil packed with grease, a kitchen far hotter than the maker allows or a booster fed cold water. Probe two or three items of food with a calibrated thermometer and write the readings and the time on your temperature log. If it comes back, it needs a visit. ### How do I quiet the HI alarm on a True cabinet? Several True displays have a key marked to enter or mute the audible alarm, and on Dixell controls any key silences it. Muting only stops the beeper, so keep logging temperatures until the display shows the cabinet temperature again. ### Why does my True show HI right after a delivery? A load of room-temperature product warms the air that passes the probe, and the control reports it. Keep the doors shut and watch the reading; a number that keeps climbing instead of falling points to the cooling side. ### Is HI the same on every True unit? The meaning is the same, but the letters and the alarm limit depend on which control your unit carries.
