Vulcan digital and computer fryers watch for oil that is running away above the setpoint. At 415°F, or 40°F over the setpoint on QuickFry models, the control disables the heat, stops any timers and locks the buttons. Solid-state models show HIGH TEMP or HI TEMP, and computer models show HIGH TEMP or HIGH TMP. Often the cause sits outside the unit, such as a door left open during a delivery, a coil packed with grease, a kitchen far hotter than the maker allows or a booster fed cold water.
