Everyone out first. Food at risk? Move it A fryer or grease fire is a 911 call the moment it spreads beyond the vat or the suppression system goes off. Suppression or Class K as taught, never water, everyone out. Nothing on the line is relit until the suppression system is recharged and the fryer checked. ## What it usually means. Frying oil does not burn at its working temperature; it burns when it passes its flash point, and several ordinary things bring that point closer. Oil used past its life breaks down and smokes and ignites lower than fresh oil. A vat run low bares its heating tubes or elements, which then overheat the thin layer left. A thermostat that sticks calling for heat lets the oil climb, and the separate high-limit control, the fryer's last line of defense, should cut the heat before ignition but can fail too. Crumbs and breading charred in the cold zone, and grease soaked into hood filters above, give a flame somewhere to spread. Every fryer under a hood is covered by a fixed suppression system with nozzles over the vats, a manual pull station and a fuel shutoff, plus a Class K wet chemical extinguisher on the wall. Those are the tools, used the way the staff were taught. Water is never one of them: it flashes to steam under the oil and throws burning oil across the kitchen. Anyone in doubt leaves and calls 911, and after any discharge both the suppression system and the fryer are serviced before the vat is heated again. The 6 causes, cheapest first Answer these first 01 Did the flame start in the vat, in the hood filters above it, or under the fryer by the burners? 02 Did the suppression system discharge, and did it shut the gas or power to the line? 03 How many days had the oil been in use, and was it smoking before the flare? 04 Was the oil level below the fill line, or had the vat just been refilled with solid shortening? 05 Did the fryer keep heating past its set point before the fire, as far as anyone could tell? ## Check these before you book.
