A sandwich or salad prep table does a hard job: it keeps open pans of cut food cold in a rail with no door, a few feet from the cooking line, for a whole service. Cold air from the base is blown up and around the pans, and the lid that folds over the rail keeps that air in whenever it is closed. The rail runs warm when that air cannot do its work. Pans heaped above their fill line poke into warm kitchen air. A lid left up through the lull between rushes lets the cold pour out. Empty spots in the rail without an adapter bar or a filler pan open a direct path to warm air. Below, the condenser coil draws flour dust, grease and lint from the kitchen floor and slowly chokes. After those come worn parts: a rail fan that stops, a lid gasket that has shrunk, a controller probe out of calibration, and eventually a leak or a compressor wearing out.
