The gas side of a cooking line runs from the building manifold through a quick-disconnect hose to each piece, and then through a regulator, valves and burners that have to light every time. A six-burner restaurant range may run standing pilots on each burner and on the oven, a griddle has two or more burners under the plate with its own thermostats or manual valves, and a charbroiler lights a row of burners under radiants or briquettes. The technician checks the supply and manifold pressure with a manometer, inspects the quick-disconnect hose, its restraint cable and the connector for wear, and watches each pilot and burner light. Thermostats on griddles and oven cavities are compared against a probe. Repairs include pilot assemblies, thermocouples, burners and orifices, valves and knobs, regulators, thermostats and hoses. Each fitting the technician disturbed is tested for leaks with an electronic detector or approved bubble liquid before the equipment goes back to service, and nobody on staff should open a fitting in between. Grease and spills clog pilot orifices, a thermocouple that is aging stops holding the safety valve open, and strong hood draft or a kitchen door can blow a weak pilot out.
