The open lower door of a stainless commercial gas fryer on a restaurant cooking line, a blank riveted metal data plate with no readable marks inside the fryer door lit by a small flashlight held in a hand seen only to the wrist, the fryer's cooled oil vat and a hanging basket just visible above, nothing outdoors.

Troubleshooting

Where the data plate hides on restaurant equipment: fryer doors, cabinet corners and the screen

A commercial equipment data plate lists the model and serial number, the electrical supply, and the fuel on gas-fired units. Look in the upper right of a Traulsen reach-in, on the inside left wall of a Victory reach-in, inside the door of Frymaster, Pitco and Henny Penny fryers, on top of the door on a Hobart LXn, and in the settings screen of a Rational combi.

At a
glance.

The commercial equipment data plate carries the model and serial number, the voltage and phase, and for gas equipment the fuel it was set up for, and no two makers put it in the same place. Finding it before the technician arrives saves a second trip for the wrong part.

What the commercial equipment data plate tells a technician

The data plate is the unit's identity card. The model and serial number decide which parts fit, and the supply figures record what the unit was built to run on. Frymaster's gas fryers are to be connected through a regulator set to the manifold pressure marked on the rating plate, and a fryer stamped NAT, PRO or MFG is to be connected only to natural, propane or manufactured gas respectively.

On cold storage the plate usually adds the refrigerant and its charge. Victory tells installers to rely on the equipment data plate for amps, refrigerant and refrigerant charge as the most up-to-date values. Those lines mean little to the crew and a great deal to the technician deciding what to load into the van.

  • Model number and serial number
  • Voltage, phase and amps, or the circuit size
  • Gas type and manifold pressure on gas units
  • Refrigerant type and charge on cold storage
  • Listing and sanitation marks from the testing agencies

Copy every plate before you need it

Photograph every plate in the building on a quiet afternoon and keep the pictures in one shared folder, named by station. When a unit quits at six in the evening, nobody has to empty a reach-in or pull a fryer out from the line just to read a serial number.

Reach-ins, prep tables and walk-in coolers

Traulsen places its serial tag in the upper right of the interior on its reach-in, pass-through, roll-in and roll-through refrigerators, freezers and dual-temperature models, and uses it to record the electrical and cooling data along with the model and serial. Victory's RS reach-ins carry the data plate on the inside of the left wall, with the agency marks beside the model and serial numbers. On undercounter units and prep tables, look inside each door and behind the front grille.

A walk-in cooler has more than one plate: usually one for the insulated box, near or inside the door frame, and one on each part of the cooling system, the condensing unit outside and the evaporator inside. The condensing unit's plate is the one parts depend on, and it often sits on a roof or in a locked mechanical room, which is why that one is left to the visit.

Leave the plate where it is

Victory's warranty terms say that removing or altering the serial or data plate releases the maker from its warranty obligations. Do not peel a plate off to clean behind it, paint over it, or stick inventory labels across it.

Fryers, ovens and the rest of the cooking line

Fryers are the easiest. Frymaster, Pitco and Henny Penny all fix the data plate to the inside of the fryer door, and Frymaster adds a wiring diagram there too. Open the door with the fryer off or idling and read it with a flashlight; nobody should ever need to reach past the door toward the vat or the burners to find it.

Ovens vary more. Blodgett's Zephaire gas convection oven keeps its rating plate inside the control compartment, reached by pulling out the control panel, which is a task for the service visit rather than the crew. Rational's combis display the serial number in their settings and inside every error message, so a clear photo of the screen often does the job without opening anything.

When the plate is scorched or greasy

Heat and grease darken plates along the line. Wipe with a cleaner safe for stainless steel and a soft cloth, read at a low angle with a flashlight, and if the digits are gone, look for the serial on the purchase invoice, the maker's warranty registration or a label on the manual that shipped with the unit.

Dish machines and laundry equipment

Hobart puts the LXn data plate on top of the door, and tells the installer to confirm that the electrical supply matches it and to size the service from it before connecting. On larger door-type and conveyor machines the position changes from model to model, so read the installation pages of the manual before anyone goes looking behind a panel; the lower front panel on the LXn, for instance, hides the wiring diagram, not a place for the crew.

Laundry machines differ by model, and the manuals show it with a picture rather than words. UniMac opens its washer-extractor manual with a figure of the serial plate location and asks for the model and serial numbers whenever parts or technical help are requested. On card and coin machines the same details often appear in the control's diagnostic menu as well.

What to send when you book

A plate photo only helps if it can be read. Stand square to it, fill the frame, and take a second shot with the flash off if the first one glares. Then add the few details a plate cannot tell anyone.

  • A sharp photo of the whole plate, every line readable
  • Where the unit sits on the line or in the room
  • Whether a gas unit is on a quick disconnect and flexible connector
  • The controller message and when it first appeared
  • The purchase date and the maker's warranty paperwork if it is still in term

Step
by step.

Four steps, in the order worth doing them.

01

Switch off or idle

Turn the unit off, or let a fryer or oven sit idle, before opening any door to look.

02

Open the obvious door

Check inside the fryer door, the cabinet walls, the top of a dish machine door or behind a front grille.

03

Check the screen

On a combi or any unit with a touch screen, look for the serial number in the settings or the service information.

04

Photograph and file

Take a readable photo and save it under the station name before closing the door.

Questions
owners ask.

Is the model number enough without the serial?
Often not. Makers change parts within a model over the years, and the serial tells the technician which version is in front of them.
The plate is missing. Can the unit still be repaired?
Usually. The serial may be on the invoice, the warranty registration, the controller's settings or a second label inside. Victory notes that a removed plate affects its warranty, so mention it when booking.
Why does the technician ask for the gas type when the line is already gas?
Burners are fitted for one fuel, and natural gas and propane run through differently sized orifices at different pressures. The makers stamp the gas type on the plate, and a unit moved between buildings may no longer match its supply.
Where is the plate on a walk-in cooler?
There are several: one for the box and one for each cooling component. The condensing unit's plate is the one for parts, and reaching a roof unit is part of the visit.
