A technician in a plain gray work shirt, seen from behind and shoulders down, kneels at the open lower door of a cold stainless gas fryer on a restaurant cooking line, a small flashlight pointed at the gas valve and pilot area inside, the empty vat and baskets above, the fryer clearly the subject, even kitchen light.

What the commercial fryer repair
involves.

A commercial fryer holds a vat of oil at a steady setpoint all day, and every part of it exists to keep that temperature exact and safe. On a gas fryer, the gas valve feeds burners under the vat or into heat tubes, lit by a standing pilot or by electronic ignition with a flame sensor. A thermostat or a probe tells the valve when to open, and a separate high-limit shuts everything down if the oil climbs past a safe point. Electric fryers do the same with elements, contactors and a tilt switch that cuts power when the elements are lifted. Many fryers add built-in filtration: a pump, a filter pan and valves that drain the oil, clean it and return it. The technician works with the oil cool and the vat drained where needed, never reaching into hot oil. The visit checks gas pressure with a manometer, the pilot or ignition sequence, the thermostat's accuracy against a probe, the high-limit, and on electric models the elements and contactors. Filtration systems get the pump motor, the seals and the return path checked. Repairs are usually pilot assemblies, thermopiles, thermostats, high-limits, gas valves, ignition modules, elements, contactors or pump motors, most of them parts that ship quickly.

How the visit goes

Commercial fryer repair,
step by step.

Replace the failed part, bring the vat to setpoint, confirm it holds and leave a written note of anything wearing.

01

Hear how the fryer fails, at light-off, mid-service or during filtering, and read the controller and any code on it.

02

With the oil cool, check gas pressure, the pilot or ignition sequence and the flame, or the elements and contactors on electric models.

03

Compare the thermostat or probe against a reference thermometer and test the high-limit that protects the vat.

04

Run the filtration system and check the pump, motor, valves, seals and the oil return into the vat.

05

Replace the failed part, bring the vat to setpoint, confirm it holds and leave a written note of anything wearing.

Commercial Fryer Not Heating or Slow to Recover Between Baskets

6 causes, cheapest first

Before you call

Tell us this when you book

  1. Whether the fryer is gas or electric, and whether it lights, heats slowly, overshoots or shuts off during service
  2. Whether it has built-in filtration and whether the trouble started around a filter cycle
  3. The make, model and serial, the number of vats, and any code or message on the controller
  4. Whether the oil can be cooled and drained before the visit, and where the gas shutoff for the line is

It also answers

Low to moderate,
on the site's scale.

A thermopile, a pilot assembly or a high-limit is the small end. A thermostat, a probe or an ignition module is a step up, and a gas valve, an element set or a filtration pump motor sits at the top.

All service areas

Tampa BayFL · 31 areas

Seafood kitchens around Tampa Bay fry grouper and shrimp from lunch until close, and a fryer that recovers slowly after each basket drop usually has a burner, a thermostat or a probe drifting, which the technician checks against a thermometer in the oil.

OrlandoFL · 30 areas

Orlando's quick-service kitchens near the parks run banks of fryers with built-in filtration, and a filter pump that stalls or a return valve that weeps is fixed quickly, since a vat that cannot be filtered burns through its oil a day early.

Miami / South FloridaFL · 47 areas

South Florida kitchens frying through summer storms see power blips reset fryer computers in the middle of a shift, so a repair visit there checks the controller, the high-limit and the gas valve to make sure each vat restarts cleanly after the lights flicker.

New York MetroNY · 75 areas

New York fryers often stand in narrow storefront or basement lines under tight hoods, and a pilot that keeps dropping out there is often a draft from the exhaust fan or a delivery door rather than a spent thermocouple, which the technician sorts out on site.

HoustonTX · 36 areas

Houston fried-chicken and Cajun kitchens run pressure and open fryers from morning to night, and the heat inside those cabinets bakes wiring and gas valve parts, so a fryer repair there includes the cabinet's cooling air and the state of its wiring.

ChicagoIL · 50 areas

Lent brings Friday fish-fry lines out the door across Chicagoland, and a fryer barely used since last spring may show a sticky gas valve or a clogged pilot just when the kitchen needs every vat, so many owners book a check in February.

Los AngelesCA · 95 areas

Los Angeles kitchens that fry churros, fries and tempura on one line run fryers with different oils and set points, and a technician there verifies every vat with a probe, since a drifting thermostat costs both food quality and oil life.

San DiegoCA · 31 areas

San Diego fish-taco counters fry for hours in warm coastal air, and a fryer that shuts itself off in the rush has usually tripped its high-limit, which the technician tests before any reset, since that limit is what keeps the oil short of its flash point.

San Francisco Bay AreaCA · 74 areas

Bay Area kitchens pair every fryer with a hood suppression system under strict fire rules, and a fryer repair there confirms the unit still sits under its nozzles and that its flexible gas connector and restraint cable are in place for a seismic zone.

Questions about
the commercial fryer repair.

Our fryer heats but the food comes out greasy. Could it be the thermostat?
Greasy, pale food usually means the oil is running cooler than the dial says or recovers too slowly between baskets. A drifting thermostat, a weak burner or a tired element are common causes, and so is overloading the basket; a reference thermometer settles it quickly.
What does the high-limit on a fryer actually do?
It is a separate safety that shuts off gas or power if the oil gets far hotter than the thermostat should allow. If it trips, the thermostat or its probe has usually drifted or failed, so a reset without finding why is not a repair.
Should we drain the oil before a fryer repair visit?
If the fryer can be drained safely by the staff who do it every day, yes, once the oil is cool. It saves time and keeps the technician's hands out of oil. Never drain hot oil in a rush for the visit; we can work around a full vat when needed.
