A technician in a plain gray work shirt, seen from behind and shoulders down, crouches at the pulled-out rear of a stainless restaurant cooking line, holding a small electronic gas leak detector near a quick-disconnect gas hose with a steel restraint cable, the griddle and burners above him unlit, the gas connection clearly the subject, even kitchen light.

What the commercial cooking line gas repair
involves.

The gas side of a cooking line runs from the building manifold through a quick-disconnect hose to each piece, and then through a regulator, valves and burners that have to light every time. A six-burner restaurant range may run standing pilots on each burner and on the oven, a griddle has two or more burners under the plate with its own thermostats or manual valves, and a charbroiler lights a row of burners under radiants or briquettes. Grease and spills from a full service reach every pilot and port, so the most common calls are pilots that go out, thermocouples that no longer hold the valve open, burners with clogged ports that burn yellow and lazy, and griddle sections that will not come up to heat. The technician checks the supply and manifold pressure with a manometer, inspects the quick-disconnect hose, its restraint cable and the connector for wear, and watches each pilot and burner light. Thermostats on griddles and oven cavities are compared against a probe. Repairs include pilot assemblies, thermocouples, burners and orifices, valves and knobs, regulators, thermostats and hoses. Each fitting the technician disturbed is tested for leaks with an electronic detector or approved bubble liquid before the equipment goes back to service, and nobody on staff should open a fitting in between.

How the visit goes

Commercial cooking line gas repair,
step by step.

Replace the failed parts, leak-check every opened joint, relight the line and leave a written list of what is wearing.

01

Hear which burners, pilots or sections fail and when, and look over the line, the hood clearance and the gas connections.

02

Measure the supply and manifold gas pressure, and inspect the quick-disconnect hose, restraint cable and connectors.

03

Watch every pilot and burner light, judge the flame, and test thermocouples, safety valves and igniters.

04

Compare griddle and oven thermostats against a probe, and clean or replace clogged burners and orifices.

5 of them, from pilot won't stay lit on a fryer, griddle or steamer on the line to commercial appliance error code on a combi, fryer, dish machine or laundry display.

Before you call

Tell us this when you book

  1. Which pieces on the line are affected: range burners, the oven below, a griddle section, a charbroiler or a hot top
  2. Whether pilots go out, burners will not light, flames burn yellow or a section will not come up to heat
  3. Natural gas or propane, and where the gas shutoff for the line and for the building is
  4. The make, model and serial of each affected piece, and whether it was moved or reconnected recently

It also answers

Low to moderate,
on the site's scale.

Cleaning a pilot or a burner and replacing a thermocouple is modest. A safety valve, a griddle thermostat or a regulator is in the middle, and several sections of a line, or a new hose with its restraint cable, make the fuller job.

All service areas

Tampa BayFL · 31 areas

On Tampa Bay cooking lines, griddles and charbroilers stand near open back doors and salt air, where burner ports rust and pilots blow out, so a repair there cleans and resets every flame and confirms each appliance shutoff turns before the line reopens.

OrlandoFL · 30 areas

Orlando restaurants run griddles and charbroilers nearly without a break for visitors, and valves and thermostats wear under that pace, so a line repair there often replaces a worn griddle thermostat and sets the flame on every burner down the line.

Miami / South FloridaFL · 47 areas

After a South Florida hurricane, gas cooking lines stay off until the utility and a technician have confirmed the supply, and the repair visit then relights pilots, checks each burner's flame and inspects connectors that may have shifted in the storm.

New York MetroNY · 75 areas

New York cooking lines draw gas from old building risers, and a charbroiler or griddle that burns weak at the peak of dinner may be starved by pressure shared with the whole building, which the technician measures at the appliance inlet.

HoustonTX · 36 areas

Houston cooking lines live with flood risk, and a line that was under floodwater needs its gas valves, thermostats and pilot assemblies inspected by a technician before it is relit, never simply wiped dry and fired.

ChicagoIL · 50 areas

In a Chicagoland winter the exhaust hood can pull cold air through a kitchen hard enough to make pilots on the line flicker and die, so a repair there checks the makeup air along with the pilot assemblies, burners and valves.

Los AngelesCA · 95 areas

Los Angeles is a seismic zone, so every gas appliance on a cooking line is expected to have a flexible connector and a restraint, and a line repair there checks both while cleaning burners and setting flames on the griddles and charbroilers.

San DiegoCA · 31 areas

San Diego's waterfront restaurants lose burner heads and pilot tubing to salt corrosion, and a flame that lifts or burns yellow there is cleaned and adjusted before it can soot the hood filters or leave a pilot unlit.

San Francisco Bay AreaCA · 74 areas

Some Bay Area cities now limit gas in new buildings, yet many restaurants still cook on older gas lines, and a repair there keeps those burners safe with pilot, valve and thermostat checks and a look at each appliance's connector.

Questions about
the commercial cooking line gas repair.

Why do the pilots on our cooking line keep going out?
Grease and spills clog pilot orifices, a thermocouple that is aging stops holding the safety valve open, and strong hood draft or a kitchen door can blow a weak pilot out. When several go out at once, low supply pressure is worth checking.
Can staff relight a pilot that went out on the line?
Yes, if they follow the maker's lighting steps printed on the unit and there is no gas smell. If a pilot will not stay lit after two tries, or anyone smells gas, shut the valve, stop and call; repeated attempts can fill the space under the unit with gas.
Should a gas hose be replaced when a piece of equipment is moved?
Not automatically, but it should be inspected every time. A hose that is kinked, crushed under a caster, stretched past its length without a restraint cable, or corroded at the fittings should be replaced. The connection is leak-checked after any move.
