Cleveland SureCook light: why the SteamChef timer is not counting down

On SteamChef steamers with the dial timer, the SureCook light stays lit while the compartment is below cooking temperature, for example during preheat or right after a full load of frozen pans goes in.

What SURECOOK light
actually means.

On SteamChef steamers with the dial timer, the SureCook light stays lit while the compartment is below cooking temperature, for example during preheat or right after a full load of frozen pans goes in. In timed mode the timer does not count down while it is lit, so cook times are not shortened by a cold start.

What to do when SURECOOK light shows on the commercial appliance

Before you book,
in this order.

Each step comes from Cleveland's own guidance for SURECOOK light on its commercial appliances. Follow it to the end: the last card says whether this is a visit.

01

Close the door and give the steamer time; after power-on the light goes out once it has preheated.

02

Preheat the steamer for about 15 minutes before service so the first batch does not wait on SureCook.

03

If the light stays on for a long time with water in the reservoir, check the power light is on and book a visit if heat never builds.

Cleared?

The code is gone from the controller, the box pulls down to its set point and holds it, the vat or the cavity reaches temperature and recovers on schedule, the rinse hits its heat and the drum finishes its spin, all without a new part. If the same code comes back within a week, or during the next busy shift, mention it when you book.

What not to do

SureCook is normal operation, not an alarm; the steamer is doing what Cleveland designed it to do. A true overheat shows the separate RESET light with a buzzer.

All problems

No repair indicated

Nothing to repair.

Nothing on the unit has broken; the controller is reporting a state it chose or one somebody set. A defrost pauses cooling for a scheduled melt and shows a warmer air reading for a while, a combi asks for a delime or runs its clean cycle and locks the door until it ends, a dish machine or a laundry machine sits in energy save between busy periods, and a door-open reminder beeps after a long delivery. No part is needed: letting the cycle finish, or the key sequence in the manual, brings the unit back.

Questions
about SURECOOK light.

Can I clear SURECOOK light myself?
Close the door and give the steamer time; after power-on the light goes out once it has preheated.
Why won't my Cleveland SteamChef timer start?
If the SureCook light is on, the compartment is still below cooking temperature and the timer is waiting. It starts counting once the light goes out.
How long should the SureCook light stay on?
Cleveland suggests turning the steamer on about 15 minutes before cooking so it reaches standby temperature. A light that stays on much longer than that points to a heating problem.
Is SureCook the same as manual mode on a SteamChef?
No. In manual mode the dial timer does not work at all, while SureCook only holds the timer until the compartment is hot.

Still showing SURECOOK light?

A booking with a code goes further when it has the code as shown, the model and serial from the data plate, and a word on whether the unit still holds temperature, heats, rinses or spins. With those three, the office can match the likely part to your unit the same day.
