A working restaurant cooking line under a stainless ventilation hood, two stainless gas fryers with baskets hanging above the oil, a flat griddle and a combi oven with a glass door beside them, the equipment clearly the subject, a cook seen only from behind and shoulders down at the far end of the line, warm kitchen light, small blue flames visible under the griddle.

Cleveland commercial appliances,
specifically.

Cleveland Range, in Cleveland, Ohio, makes steam cooking equipment for commercial kitchens: convection and pressure steamers, steam jacketed kettles, braising pans and tilt skillets, and cook-chill systems for central kitchens. Schools, hospitals and hotels are where we meet most Cleveland equipment, often in batteries of kettles and stacked SteamChef units.

What is particular
to Cleveland.

We work on Cleveland SteamChef and SteamCraft steamers, KEL electric and KGL gas kettles, braising pans and tilt skillets, and the cooking side of cook-chill systems. Gas steamers use electronic ignition that locks out after a failed try, while electric units stop on their high limit.

Steam from sealed water

Cleveland's self-contained kettles make steam from distilled water sealed inside the jacket. A red low-water light means that water has leaked away, and the jacket is refilled only with distilled water and rust inhibitor after the leak is fixed.

Boilerless steamers rely on probes

SteamChef boilerless steamers fill and hold water with low and high water probes inside the compartment. Scale or food film on those probes is the usual reason a SteamChef overheats and locks out with its RESET light.

Two kinds of steamer

Boilerless SteamChef units are the most common, but Cleveland also builds steamers with their own steam generator, such as the SteamCraft Ultra, which carry a DESCALE reminder light and need the generator descaled on a schedule.

Gauges tell the story

Kettles carry a vacuum and pressure gauge. A needle in the VENT AIR zone when cold means air in the jacket and longer cook times, which we check before blaming the elements or burners.

Parts

Water level probes, high limits, ignition parts and timers are ordered by model and serial number from the data plate. Kettle jacket work needs distilled water and rust inhibitor on hand, and tilt mechanisms and gearboxes can be longer-lead parts.

Repair or replace

A Cleveland kettle or skillet body lasts for decades, so failed controls, elements or tilt parts are almost always worth repairing. A steamer with a scaled or cracked generator, or a kettle jacket that keeps losing water, is when replacement is worth comparing.

Questions about
Cleveland commercial appliances.

Why does our Cleveland kettle light red when we tilt it?
On tilting kettles the jacket water moves off the heaters when tilted, and Cleveland says the red light coming on then is normal. It should go out once the kettle is upright.
What stops a Cleveland SteamChef from locking out?
Clean the water level probes daily and never run it without water. Most RESET lockouts trace back to probes that misread the water level.
Can a Cleveland kettle jacket be topped up with tap water?
No. Cleveland asks for distilled water with rust inhibitor, added by a technician after the leak is fixed; tap water can damage the jacket.
Do you work on Cleveland tilt skillets and braising pans?
Yes. We service their heating, thermostats and tilt mechanisms along with the steamers and kettles on the same line.
