What E36
actually means.

In steam mode the CTP cabinet should sit near the boiling point of water. E36 is called out when the N6 probe reads above 395°F in steam, retherm or cleaning, or above 600°F in combination, for more than 60 seconds. The manual lists a shut or weak water supply, scale on the injection pipe, a flow restrictor or water valve, or a blocked bypass hose.

What to do when E36 shows on the commercial appliance

Before you book,
in this order.

Each step comes from Alto-Shaam's own guidance for E36 on its commercial appliances. Follow it to the end: the last card says whether this is a visit.

01

Acknowledge E36 and stop the program.

02

Make sure the oven's water valve is open and the kitchen has its usual pressure.

03

Book a visit if water is on; the injection pipe, restrictor and valve need a technician.

Questions
about E36.

Can I clear E36 myself?
Acknowledge E36 and stop the program. If it comes back, it needs a visit.
Why would an Alto-Shaam overheat in steam mode and show E36?
Without enough water the cabinet dries out and heats past steam temperature. A closed supply or scale in the injection path are the usual causes.
Can E36 on an Alto-Shaam happen during cleaning?
Yes. The manual includes the cleaning program in the E36 limits.
Is E36 on an Alto-Shaam the same as E11?
No. E11 covers convection and combination cooking at 600°F; E36 is the steam-side limit.

Still showing E36?

A booking with a code goes further when it has the code as shown, the model and serial from the data plate, and a word on whether the unit still holds temperature, heats, rinses or spins. With those three, the office can match the likely part to your unit the same day.
