What E16
actually means.

The controller watches its own first high-limit threshold. When the frypot oil climbs past 410°F, it logs E16 and sounds the alarm, because the normal thermostat function should never have let the oil get that hot. Oil this hot is close to the point where it degrades fast and becomes a fire risk.

What to do when E16 shows on the commercial appliance

Before you book,
in this order.

Each step comes from Frymaster's own guidance for E16 on its commercial appliances. Follow it to the end: the last card says whether this is a visit.

01

Turn the fryer off at the controller right away and keep staff and baskets away from the vat.

02

Keep the hood suppression system and the Class K extinguisher ready; if smoke turns to flame, use them as your kitchen was trained, never water, and call 911.

03

Let the oil cool in place without draining it hot, and book a visit before the vat is heated again.

It usually turns into reach-in and prep table repair. Book with the code and the model number.

What not to do

E16 is the controller's own temperature ceiling; E17 is the separate mechanical high-limit switch opening, and E18 means the oil reached 460°F without that switch opening. A plain LOW TEMP or recovery message is the opposite problem: oil that will not come up to heat.

Questions
about E16.

Can I clear E16 myself?
Turn the fryer off at the controller right away and keep staff and baskets away from the vat. If it comes back, it needs a visit.
What should staff do first when a Frymaster shows HOT-HI-1?
Switch the fryer off and step back from the vat. Frymaster wants the fryer shut down at once and serviced; resetting it and carrying on is not an option the manual offers.
Can oil that triggered E16 on my Frymaster be reused?
Overheated oil breaks down quickly, and the manager should judge it by smell, color and smoke point once it has cooled. Many kitchens discard it, but first the fryer itself needs a visit, since the thermostat side of the control let the heat run away.
Why would a Frymaster overheat oil when the setpoint is normal?
The controller keeps calling for heat when it is misreading the oil or when a heat contactor or gas valve is stuck on. Both are checked on the visit, together with the probe position in the frypot.

Still showing E16?

A booking with a code goes further when it has the code as shown, the model and serial from the data plate, and a word on whether the unit still holds temperature, heats, rinses or spins. With those three, the office can match the likely part to your unit the same day.
