What E21
actually means.

The N6 probe tells the CTP how hot the cooking cabinet is. E21 is called out when that probe is malfunctioning or disconnected. Without it the CTP has no idea how hot its cabinet is.

What to do when E21 shows on the commercial appliance

Before you book,
in this order.

Each step comes from Alto-Shaam's own guidance for E21 on its commercial appliances. Follow it to the end: the last card says whether this is a visit.

01

Acknowledge E21 with Start and take the food out.

02

Finish the batch in another oven.

03

Book a visit; the probe and its wiring sit behind panels that stay closed for anyone but a technician.

Still there?

It usually turns into commercial controls and board repair. Book with the code and the model number.

What not to do

E21 is not the food probe, which reports as E20 or E22. When the same probe shorts to ground instead of opening, the oven reports E43.

Where E21 usually leads

Commercial controls and board repair.

Controller, touch panel, probe or sensor, relay, contactor, power supply, door switch or interlock, tested before anything is changed · moderate.

Questions
about E21.

Can I clear E21 myself?
Acknowledge E21 with Start and take the food out. If it comes back, it needs a visit.
Can I cook with E21 on an Alto-Shaam combi?
It is not advisable, since the oven cannot measure its cabinet. Move the food and book a visit.
What is N6 on an Alto-Shaam CTP?
It is the name the manual gives the cavity temperature probe. You will see the same label in E11, E36 and E43.
Is E21 different from E43 on an Alto-Shaam?
Both involve the N6 probe. E21 reads it as open or disconnected, while E43 reads it as shorted to ground.

Still showing E21?

A booking with a code goes further when it has the code as shown, the model and serial from the data plate, and a word on whether the unit still holds temperature, heats, rinses or spins. With those three, the office can match the likely part to your unit the same day.
