What PROBE OPEN
actually means.

The temperature probe sits in the cook zone of the tank and feeds the computer the oil temperature. When the probe or the wires and connectors to it break continuity, the display alternates PROBE OP and OPEN and the fryer will not regulate heat. Pitco's technicians test the probe with an ohmmeter and then check each connector back to the control.

What to do when PROBE OPEN shows on the commercial appliance

Before you book,
in this order.

Each step comes from Pitco's own guidance for PROBE OPEN on its commercial appliances. Follow it to the end: the last card says whether this is a visit.

01

Turn the fryer off and do not try to fry by guessing the temperature.

02

Note whether the message appears on one tank or several, and whether it came after a boil-out or a deep clean.

03

Leave the probe and its wiring alone; a technician has to meter the probe and trace the harness, so book a visit.

What not to do

PROBE OPEN is a broken circuit, while SYSTEM FAILURE on the same computer means the probe circuit is shorted. Neither is an overheating alarm, although a fryer that cannot read its oil must be treated with the same caution.

Questions
about PROBE OPEN.

Can I clear PROBE OPEN myself?
Turn the fryer off and do not try to fry by guessing the temperature. If it comes back, it needs a visit.
Can boiling out a Pitco cause PROBE OPEN?
It can, if water or cleaner reaches a damaged probe or loosens a connector. The probe still has to be measured to know for sure.
Does PROBE OPEN mean the Pitco probe itself is bad?
Often, but not always. Pitco tests the probe and then the wires and connectors between the probe and the controller, because a broken wire gives the same message.
Will a Pitco heat with PROBE OPEN on the display?
It should not. Without a probe reading the control has no safe way to hold temperature, so plan on that tank being out of service until the visit.

Still showing PROBE OPEN?

A booking with a code goes further when it has the code as shown, the model and serial from the data plate, and a word on whether the unit still holds temperature, heats, rinses or spins. With those three, the office can match the likely part to your unit the same day.
