A stainless commercial fryer on a kitchen line with its oil sitting still and pale in the vat, two empty wire baskets hanging on the rack above, the burner sight opening at the front dark.

Commercial Fryer Not Heating or Slow to Recover Between Baskets

A commercial fryer not heating stays cold after it is switched on, heats but never reaches its set point, or drops so far after each basket that fries come out pale and greasy during the rush.

What it
usually means.

A commercial fryer, gas or electric, has a short chain of controls between the switch and the oil. On a gas fryer, a pilot or an electronic igniter lights the burners once the gas valve opens, and a thermostat or temperature probe tells the valve when to fire. On an electric fryer, contactors switch heavy elements on and off from the same kind of probe. Guarding both is a high-limit control that cuts the heat if the oil runs too hot, and many fryers add a drain valve interlock that blocks heating while the drain is open. So a cold fryer is often one of those guards doing its job: the melt cycle still running on a vat of solid shortening, the drain handle left a little open after filtering, or the high-limit tripped after the fryer was switched on low or empty. After that come worn parts: a pilot or igniter that cannot prove flame, a probe reading wrong, a gas valve or a contactor that has failed. Slow recovery during a rush is often the same story in its early stage, or a vat loaded with more frozen product than it was designed for.

A technician in a plain gray work shirt, seen from behind and shoulders down, holds a digital probe thermometer at the open door of a stainless reach-in cabinet in a quiet restaurant kitchen before opening time, a plain clipboard resting on the prep counter beside him, the reach-in clearly the subject, even overhead kitchen light. The 6 causes, cheapest first

Answer these first

01

Is the fryer completely cold, warm but short of its set point, or fine until a heavy load goes in?

02

Is it gas or electric, and on gas, is the pilot or burner flame visible through the sight opening?

03

Is the drain valve handle fully closed after the last filtration?

04

Was the fryer turned on with the oil low or the vat empty at any point?

05

Does the display show a code, a melt message or a light for the high-limit?

Check these
before you book.

Commercial fryer not heating: 5 checks, and none of them costs anything.

01

Look at the oil level against the fill line from a safe distance, and never reach into the vat or put a hand near hot oil.

02

Make sure the drain valve handle is fully closed and the melt cycle has finished.

03

Reset the high-limit once, only as the manual describes; if it trips again, stop and book.

Also worth checking

  • On a gas fryer, check that the gas valve at the appliance is open and look for a pilot flame through the sight opening.
  • Leave the gas connections, the burner area and the wiring behind the panel to the technician.

How soon does it need a visit?

A fryer that will not heat at all takes a station off the line, so most kitchens book the same or next day. One that is just slow to recover can wait for a booked visit this week, provided it is not smoking or overheating.

The causes,

6 things commercial fryer not heating or slow to recover between baskets turns out to be, from melt cycle still running on solid shortening to gas valve or element contactor failed.

The cost guide
  1. 01 no repair

Melt cycle still running on solid shortening

Fryers pulse their heat gently while solid fat melts so the tubes are not scorched. Waiting for the cycle to end, or skipping it only where the manual allows for liquid oil, is all that is needed.

  2. 02 no repair

Drain valve left partly open after filtering

Many fryers hold the heat off while the drain interlock senses an open valve. Closing the handle firmly usually brings the burners or elements back within seconds.

  3. 03 low

    High-limit tripped after a low-oil heat-up

Heating with too little oil trips the high-limit, which then needs a reset. The manual shows where; if it trips a second time, the thermostat and limit are tested on a visit.

  4. 04 low to moderate

Pilot or igniter not proving flame

A dirty pilot, a weak thermopile or a worn igniter means the valve never opens to the main burners. The ignition parts are cleaned or replaced and the flame checked.

  5. 05 low to moderate

Temperature probe or thermostat reading wrong

A probe coated with carbon or a thermostat out of calibration shuts the heat off early. It is tested against a reference thermometer and replaced if it is off.

  6. 06 moderate

Gas valve or element contactor failed

A valve that will not open fully or a contactor with burned points starves the vat of heat. The part is replaced and the recovery time is measured against the maker's figure.

Questions about
commercial fryer not heating or slow to recover between baskets.

The fryer heats, but fries come out pale during the lunch rush. Is that a repair?
It can be an overloaded vat: too much frozen product per basket drops the oil faster than it recovers. If recovery is slow even with normal loads, the burners, elements or probe are checked on a visit.
Where is the high-limit reset on a commercial fryer?
It varies by make and model; the manual shows it. Use it once. A second trip means something is wrong and the fryer is booked.
Can we filter oil while the fryer is still hot?
Most fryers with built-in filtration are made to filter hot oil, following the maker's steps and with proper gloves and aprons. Nobody reaches into the vat, and the drain handle is closed fully afterward.
Our fryer's pilot keeps going out and the fryer goes cold. Same problem?
Often, yes. A pilot that will not stay lit stops the burners, so the pilot page on this site applies too.
