A working restaurant cooking line under a stainless ventilation hood, two stainless gas fryers with baskets hanging above the oil, a flat griddle and a combi oven with a glass door beside them, the equipment clearly the subject, a cook seen only from behind and shoulders down at the far end of the line, warm kitchen light, small blue flames visible under the griddle.

Pitco
Restaurant Equipment Repair

A Pitco visit begins only once the vat is cool enough to drain, since nobody on the crew should be reaching near hot oil.

Pitco commercial appliances,
specifically.

Pitco Frialator of Concord, New Hampshire, a Middleby company, has built fryers since 1918 and also makes pasta cookers, rethermalizers and Crisp N' Hold stations. Most of our Pitco calls are tube-fired gas fryers in the Solstice and Solstice Supreme families, where a tripped safety switch or a probe message is behind most of the lost frying time.

What is particular
to Pitco.

We work on Solstice and Solstice Supreme gas fryers (SG, SSH and SSHLV), Solstice electric and reduced-oil-volume SELV fryers, economy and TorQ fryers, and Pitco pasta cookers, rethermalizers and Crisp N' Hold holding stations. Built-in filter systems and auto top off are covered on the same visit as the fryer.

Sediment falls into a cool zone

Pitco's original design runs heating tubes through the middle of the tank so crumbs sink below them into cooler oil instead of burning. Keeping that zone clean matters for oil life and for the probe readings above it.

Burners that light and clean themselves

Solstice Supreme fryers use matchless ignition and a self-cleaning burner system that fires a short cleaning pulse each time the fryer is turned on. A brief popping at startup is normal on those units; popping during cooking is not.

Resets the kitchen can reach

Pitco publishes quick guides that point owners to the red high limit button and the roll-out switch behind the fryer door. When a Heat Failure keeps returning after a reset, the switch is telling us something upstream is wrong.

From millivolt to touchscreen

Pitco controls range from a simple millivolt thermostat through digital and 12-button computer controls to the Infinity Touch and OneTouch screens. The control on the front decides which messages the fryer can show and how the drain interlock reports.

Parts

Temperature probes, high limits, roll-out switches, ignition modules, relay boards and drain switches are looked up by the numbers on the fryer's data plate before anything is ordered. Filter paper, O-rings and pump strainer parts are routine stock for the kitchen.

Repair or replace

A Pitco tank in good condition is worth repairing when an ignition part, probe, switch or controller fails. A cracked or leaking tank on an older fryer is the usual point where a new, more efficient fryer is worth comparing.

Questions about
Pitco commercial appliances.

How do I reset a Pitco after a Heat Failure?
Let the fryer cool, then press the red high limit reset button behind the gas valve inside the door, as Pitco's quick guide shows, and turn the controller off and on. If the message comes back, stop and book a visit.
Why does my Pitco pop when it starts?
Solstice Supreme fryers with self-cleaning burners fire a short cleaning pulse at every startup, and Pitco says the popping that comes with it is normal. Popping that carries on while cooking needs a technician.
Why won't my Pitco heat with the drain closed?
The drain interlock uses a switch on the drain valve. If the blue handle is not fully in, or the switch is out of adjustment, the fryer still thinks it is draining and will not heat.
Does Pitco make more than fryers?
Yes. Pitco also builds pasta cookers, rethermalizers, water cookers and Crisp N' Hold stations that keep fried food warm, and we service those alongside the fryers.
