What HIGH TEMP
actually means.
Vulcan digital and computer fryers watch for oil that is running away above the setpoint. At 415°F, or 40°F over the setpoint on QuickFry models, the control disables the heat, stops any timers and locks the buttons. Solid-state models show HIGH TEMP or HI TEMP, and computer models show HIGH TEMP or HIGH TMP.

What to do when HIGH TEMP shows on the commercial applianceKind of codeTemperature and alarms
The controller has seen a temperature outside the band it was set for and is saying so: a box above its alarm point, a fryer vat or an oven cavity that tripped its high-limit, or a dish machine rinse that never came up to heat. Often the cause sits outside the unit, such as a door left open during a delivery, a coil packed with grease, a kitchen far hotter than the maker allows or a booster fed cold water. Checking the door, the coil and the air around the unit is fair; move the product if a cold box stays above 41°F, and book the visit.

Before you book,
in this order.
Each step comes from Vulcan's own guidance for HIGH TEMP on its commercial appliances. Follow it to the end: the last card says whether this is a visit.
Stop frying, keep people back from the vat and do not add product or cold oil.
Turn the fryer off and let the shortening cool on its own.
If the oil smokes heavily or flames appear, use the hood suppression system or a Class K extinguisher as trained, never water, and call 911.
Book a visit before the fryer is used again, since the probe or the gas valve may not be controlling the heat.
Still there?
It usually turns into reach-in and prep table repair. Book with the code and the model number.
What not to do
HIGH TEMP is not a normal preheat message; a fryer that reaches it has lost control of its temperature. It is also separate from the high-limit safety, which Vulcan's troubleshooting chart lists on its own as a cause of no heat.

A booking with a code goes further when it has the code as shown, the model and serial from the data plate, and a word on whether the unit still holds temperature, heats, rinses or spins. With those three, the office can match the likely part to your unit the same day.
