A working restaurant cooking line under a stainless ventilation hood, two stainless gas fryers with baskets hanging above the oil, a flat griddle and a combi oven with a glass door beside them, the equipment clearly the subject, a cook seen only from behind and shoulders down at the far end of the line, warm kitchen light, small blue flames visible under the griddle.

Vulcan commercial appliances,
specifically.

Vulcan, a division of ITW Food Equipment Group, builds the cooking side of a commercial kitchen: gas and electric fryers, convection and combi ovens, steamers, kettles, braising pans, griddles, charbroilers and restaurant ranges. Its newer fryers and ovens report problems in plain words such as IGNITION LOCKOUT or PROBE OPEN, which gives a manager something concrete to pass on when booking.

What is particular
to Vulcan.

Most Vulcan calls involve VK PowerFry and QuickFry VHG gas fryers, VC4, VC5 and VC6 convection ovens, ABC7 and ChefsCombi combi ovens, and EA, ET and GA convection steamers. Kettles, braising pans, griddles, charbroilers and restaurant ranges follow the same gas and electric service practice.

Fryer messages in words

VK, TR and QuickFry fryers with digital or computer controls spell out IGNITION LOCKOUT, PROBE OPEN, PROBE SHORT and HIGH TEMP. Each one stops the heat, so the message on the display is the first thing to note.

Filtering is a daily job

Many Vulcan fryers carry KleenScreen PLUS filtration, and Vulcan asks for the shortening to be filtered at least daily while it is between 250°F and 350°F. A pump that will not move oil is often a cold vat or a clogged screen rather than a failed motor.

A start-up check on QuickFry

QuickFry controls run a dry-fire test at power-on and show VATFULL? PUSH V until someone confirms the vat is full. A fryer stuck on that prompt usually needs its oil level checked, not a repair.

Two combi platforms

Vulcan sells the 7-level ABC7 boilerless combi and the newer ChefsCombi, and each speaks a different code language. The ABC7 shows No Heat or Err, while the ChefsCombi uses numbered messages such as E10 for a scaling steam generator.

Parts

We read the Vulcan data plate before ordering probes, ignition modules, gas valves or boards, because fryer and oven generations differ. Steam generator parts for the combis and filtration pumps for the fryers are less common and can take longer to arrive.

Repair or replace

A Vulcan fryer or oven with a sound tank or cavity is usually worth repairing when a probe, ignition part or control fails. A cracked fry tank or a rusted-through oven cavity is when replacement deserves a serious look.

Questions about
Vulcan commercial appliances.

How do I clear IGNITION LOCKOUT on a Vulcan fryer?
Vulcan says to switch the fryer off and back on, which re-initializes the control. Check first that the gas valve behind the fryer is open and the hose is connected; if the lockout returns, book a visit.
Why won't my Vulcan fryer pump oil through the filter?
Vulcan's chart lists a cold vat, a clogged screen, a suction tube that is not seated, the discard setting and a tripped motor overload. Heat the shortening to at least 300°F and clean the screen before assuming the pump has failed.
What should I do if my Vulcan convection oven shows an E number?
Write the number down and turn the oven off. Vulcan's VC5 table ties each number to a probe, the control board or the ignition system, and asks you to give the number to the service provider.
