The open door of a cold stainless combi oven in a commercial kitchen, its empty racks in view and a thin core temperature probe hanging on its holder inside the cavity, nobody at the combi oven.

What PROBE OPEN
actually means.

The temperature probe in the fry vat tells the control how hot the shortening is. When the circuit reads open, the control disables the heat demand, stops any running cook timers and locks out the operator buttons, showing PROBE OPEN. Solid-state VK and TR fryers word it OPEN PROBE.

What to do when PROBE OPEN shows on the commercial appliance

Before you book,
in this order.

Each step comes from Vulcan's own guidance for PROBE OPEN on its commercial appliances. Follow it to the end: the last card says whether this is a visit.

01

Turn the fryer off and let the shortening cool.

02

Move frying to another vat or fryer for the rest of the shift.

03

Do not bend or reach for the probe inside the vat while the oil is hot.

04

Book a visit; the probe and the wiring back to the control both get tested.

What not to do

PROBE OPEN is not the high-limit safety tripping, which the troubleshooting chart treats as a separate cause of no heat. It is also different from PROBE SHORT, which reports the opposite wiring problem.

Where PROBE OPEN usually leads

Commercial controls and board repair.

Controller, touch panel, probe or sensor, relay, contactor, power supply, door switch or interlock, tested before anything is changed · moderate.

Questions
about PROBE OPEN.

Can I clear PROBE OPEN myself?
Turn the fryer off and let the shortening cool. If it comes back, it needs a visit.
Can I reset PROBE OPEN on a Vulcan fryer?
Vulcan's manual gives no staff reset for it, because the control cannot see the oil temperature. The probe or its wiring has to be repaired.
Why are the buttons dead on my Vulcan fryer?
PROBE OPEN locks out the operator buttons on purpose, so nobody can start a cook while the control is blind to temperature.
Is the probe in a Vulcan fryer easy to replace?
It is a common part, but it sits in the fry vat and is wired to the control, so the vat must be drained and cool. That work is a service visit.

Still showing PROBE OPEN?

A booking with a code goes further when it has the code as shown, the model and serial from the data plate, and a word on whether the unit still holds temperature, heats, rinses or spins. With those three, the office can match the likely part to your unit the same day.
