A row of three stainless steel reach-in cabinets with solid doors along the wall of a working restaurant kitchen, the reach-ins clearly the subject, one door open showing sheet pans of prepped vegetables on wire shelves, a walk-in cooler door with a clear strip curtain visible at the far end, a cook seen only from behind in a white jacket passing in the soft background, bright even kitchen light.

Imperial commercial appliances,
specifically.

Imperial, a Middleby company in Corona, California, builds gas and electric cooking lines: restaurant and heavy-duty ranges, fryers and filter systems, griddles, charbroilers, salamanders, convection ovens, pasta cookers and wok ranges. It also sells the Sizzle-N-Chill, a refrigerated base that puts cold drawers under the cooking line.

Error codesImperial's ranges, fryers, broilers and ovens use knobs, thermostats and standing pilots and show no error codes; the fryer's hi-limit and the pilot safety simply shut off the gas, which you see as a pilot that is out.

What is particular
to Imperial.

We work on Imperial IR and IHR ranges, IFS and IRF fryers and filter systems, griddles, charbroilers, broilers, cheesemelters and salamanders, PCVG and PCVE convection ovens, pasta cookers, wok ranges and Sizzle-N-Chill refrigerated bases. Most Imperial line equipment is knob and thermostat controlled with standing pilots.

Three build levels

Imperial sells the same equipment in Elements, Pro and Spec series, from a lighter build for independents to 14-gauge heavy duty for chains, hotels and institutions. The series tells us how the unit is built and which parts it takes.

Thermopile fryers need no power

Imperial IFS gas fryers light from a standing pilot that heats a thermopile, so they run without an electrical hookup. A pilot that will not stay lit is usually the thermopile, its connection or the pilot flame, and the fryer's hi-limit cuts the gas if the oil overheats.

Drafts put pilots out

Imperial warns that strong exhaust fans or air conditioning can pull a slight vacuum in the kitchen and upset pilots and burners. When pilots keep going out across the line, we check the room's air balance before replacing parts.

Cold under the heat

Sizzle-N-Chill refrigerated bases, self-contained or remote, sit under a hot cooking top. Their condensers breathe kitchen air full of grease, so coil cleaning matters more than on a reach-in across the room.

Parts

Thermostats, pilot safeties, thermopiles, burners and hi-limits are ordered by model and series from the data plate. Refrigerated base parts are separate from the cooking top and are matched to the base's own model number.

Repair or replace

Imperial ranges, fryers and broilers are heavy steel with replaceable valves, burners and thermostats, so repair is the normal answer. A fryer vat that leaks or a refrigerated base with a failed compressor on an old unit is where replacement is worth pricing.

Questions about
Imperial commercial appliances.

Why do the pilots on our Imperial line keep going out?
Imperial points to strong exhaust fans or air conditioning pulling a vacuum in the kitchen. If several pilots go out together, the room's makeup air is worth checking before any parts.
How long do I hold the gas dial to light an Imperial fryer pilot?
Imperial's IFS manual says to hold the dial down for about 30 seconds or until the pilot stays lit. If it goes out on release, the thermopile or pilot needs attention.
Does an Imperial gas fryer need electricity?
The standard IFS gas fryer runs on a thermopile heated by its pilot, so it does not need a power hookup. Filter systems and some options do.
Do you service the cold drawers under an Imperial cooking line?
Yes. The Sizzle-N-Chill base is refrigeration equipment in its own right, and we check its coil, fans and door gaskets as well as the cooking top.
