A row of three stainless steel reach-in cabinets with solid doors along the wall of a working restaurant kitchen, the reach-ins clearly the subject, one door open showing sheet pans of prepped vegetables on wire shelves, a walk-in cooler door with a clear strip curtain visible at the far end, a cook seen only from behind in a white jacket passing in the soft background, bright even kitchen light.

Hoshizaki commercial appliances,
specifically.

Hoshizaki America is best known for ice, but it also builds the Steelheart line of reach-ins, pass-thrus, undercounters, worktops, prep tables and chef bases, plus the lower-cost Valiance series. On this site we handle that cold storage side: cabinets drifting above safe holding temperature, alarm codes on the control, and water around the base.

What is particular
to Hoshizaki.

Most Hoshizaki cold storage calls involve Steelheart reach-ins, pass-thrus, undercounters, worktops, prep tables with raised rails and chef bases, with Valiance, back bar coolers, merchandisers and healthcare cabinets alongside. Older HPR prep tables run an earlier control with two-character codes such as E1 and E7, so the model plate decides which code list applies.

A control that names the problem

Steelheart and Commercial Series cabinets flash a short code such as dor, Hi or E01 together with an alarm icon and a beep that repeats every minute. Writing down the exact code before anyone unplugs the cabinet saves a step on the visit.

Two filters staff can clean

Hoshizaki asks for the air filter to be checked at least twice a month and washed in warm water with a neutral cleaner, with the condenser itself brushed or vacuumed once a year. A Hi alarm on a busy line very often traces back to that filter.

A propane-based refrigerant

Current Steelheart cabinets use R-290, and the service manual opens its sealed-system section with a fire and explosion warning. Leak checks, brazing and recharging follow a stricter procedure, so sealed-system work is always a scheduled visit.

A sensor fallback, not a fix

If the cabinet thermistor fails, an upright Steelheart runs the compressor five minutes on and five minutes off rather than stopping. That keeps product cool for a while, but nothing is watching the real temperature, so the log needs more frequent entries until the repair.

Parts

Hoshizaki thermistors, door switches, fan motors and control modules are ordered from the cabinet's data plate, since Steelheart, Commercial Series and HPR parts differ. Sealed-system work on R-290 cabinets needs tools and procedures for flammable refrigerant, which can affect scheduling.

Repair or replace

A Steelheart cabinet with sound walls, doors and gaskets is usually worth repairing when a sensor, fan or control fails. When the compressor fails on an older cabinet with worn door hardware, compare the repair with a new unit before ordering parts.

Questions about
Hoshizaki commercial appliances.

How do I silence a Hoshizaki reach-in alarm?
Press and release the upper button on the control. The beep stops, but the alarm icon stays lit until the cause is gone, so check the doors, the filter and your temperature log before walking away.
Can I start a defrost on a Steelheart cabinet?
Yes, the control has a manual defrost button, and a defrost icon shows while the cycle runs. It helps after a door was left open and the coil frosted; if frost returns within days, book a visit.
Does Hoshizaki cold storage use a flammable refrigerant?
Current Steelheart models use R-290, a propane-based refrigerant that is safe inside a sealed system. If you ever hear a hiss or smell gas near one, keep flames and switches away, ventilate and get people out.
Who handles my Hoshizaki ice equipment?
Our ice machine site covers Hoshizaki cubers, flakers and ice dispensers. This page covers the reach-ins, prep tables and other Hoshizaki cold storage in your kitchen.
