A working restaurant cooking line under a stainless ventilation hood, two stainless gas fryers with baskets hanging above the oil, a flat griddle and a combi oven with a glass door beside them, the equipment clearly the subject, a cook seen only from behind and shoulders down at the far end of the line, warm kitchen light, small blue flames visible under the griddle.

Blodgett commercial appliances,
specifically.

Blodgett is best known in commercial kitchens for its convection ovens, with the Zephaire and Mark V lines, and for its combi ovens and HydroVection ovens, which add steam or humidity to convection heat. Blodgett calls on this site are mostly combis and HydroVection ovens with a message on the control, and convection ovens that stopped firing or bake unevenly.

What is particular
to Blodgett.

We work on Blodgett Zephaire, Mark V, DFG and CTB convection ovens, HydroVection ovens, and BLCT, BCX, BX-14, BC-20, Xcel and Invoq combi ovens. Blodgett deck ovens are covered by the pizza oven site instead.

Convection ovens built to last decades

Blodgett says its convection ovens can run for more than thirty years. That long life means we meet many older Zephaire and Mark V ovens, where the fix is a part rather than an oven.

HydroVection, a humid middle ground

The HydroVection keeps a convection oven footprint and split doors while adding continuous humidity. It shares probes and relay board logic with Blodgett combis, so its messages read the same way.

Water quality decides boiler life

Blodgett publishes a water treatment page for its combis, pointing to dissolved solids, alkalinity, silica and chlorides. Many boiler, level and delime messages on older combis trace back to scale.

Combis that talk in plain words

MenuSelect-era combis show messages such as Cavity Probe Error or Water Level Error, and newer touch controls keep error logs and counters. We read that history before we open a panel.

Parts

Probes, relay boards, fan drives, boiler parts and gas controls depend on the oven generation, so the data plate comes first. Probe resistance charts and Blodgett's test plug kit help confirm a sensor before it is ordered.

Repair or replace

A Blodgett convection oven with a sound cavity and doors is almost always worth repairing. On older combis, a boiler that needs replacing on top of scale damage elsewhere is the point to price a new oven against the repair.

Questions about
Blodgett commercial appliances.

How long does a Blodgett convection oven last?
Blodgett says its convection ovens can last more than thirty years with care, which is why repair is usually the better choice.
What is a Blodgett HydroVection oven?
A convection oven with split doors and continuous humidity in the same footprint, which Blodgett describes as close to a combi.
Why does my Blodgett combi keep showing water messages?
Scale and water supply are the usual reasons. Blodgett stresses water treatment for its combis, and regular deliming prevents many boiler and level messages.
Which chemicals can I use to clean a Blodgett combi?
Blodgett publishes a list of approved chemicals for its combis. Use those; other products can damage seals and parts.
