A working restaurant cooking line under a stainless ventilation hood, two stainless gas fryers with baskets hanging above the oil, a flat griddle and a combi oven with a glass door beside them, the equipment clearly the subject, a cook seen only from behind and shoulders down at the far end of the line, warm kitchen light, small blue flames visible under the griddle.

Rational commercial appliances,
specifically.

Rational builds two cooking systems for professional kitchens in the US: the iCombi combi oven, in Pro and Classic versions, and the iVario Pro multifunction pan that boils, fries and pressure cooks. Most visits are for iCombi Pro units, which number their own problems as Service messages and say on screen whether cooking can continue.

What is particular
to Rational.

We work on iCombi Pro and iCombi Classic combi ovens in electric and gas, table-top and floor sizes, and on iVario Pro multifunction pans. Tell us the model size and whether it runs on gas, since gas units have their own burner messages.

The screen says if you can keep cooking

Every iCombi Pro Service message is listed with a note on whether cooking is still possible, only hot air mode is left, or the oven is stopped. That tells a manager at once whether the lunch rush is at risk, and we plan the visit around it.

Cleaning is part of the machine

The iCareSystem judges how dirty the cabinet is, proposes a cleaning program and descales the steam generator with Rational's own tabs. A good share of Service messages come from that system, so the cleaning history is one of the first things we ask for.

A steam generator to keep free of scale

The iCombi Pro makes steam in a separate generator and shows a green, yellow or red care status for limescale. Red means heavy buildup, and a scaled generator is behind many steam complaints we see.

Gas units carry their own messages

Gas iCombi Pro ovens add burner and ignition box messages to the list, and for burner problems the manual asks you to close the shut-off valve on the gas line. Electric units never show those numbers, so the fuel type matters before we arrive.

Parts

Rational parts such as probes, pumps, valves and boards go by the serial number and software version, which the oven prints in each Service message. The operator can change the cabinet door seal, while the air filter behind the control side is a service task by Rational's own list.

Repair or replace

A probe, pump or valve failure on an iCombi that still heats and cleans properly is a repair, not a replacement. When the steam generator is badly scaled and the electronics have also failed on an older unit, weighing a newer model makes sense.

Questions about
Rational commercial appliances.

Can I keep cooking when my Rational shows a Service message?
It depends on the number. Rational's table marks each message as cooking possible, hot air only, or not possible, so read the exact number and book a visit either way.
What should I have ready before booking a Rational visit?
The serial number and the installed software version, both shown in the error message itself. Add the Service number and whether the unit runs on gas or electric.
Which cleaner should go into a Rational iCombi Pro?
Rational allows only its own Active Green cleaner tabs and care tabs in automatic cleaning, and warns against red cleaners. Wear safety glasses and chemical gloves when handling them.
Can I replace the door seal on a Rational combi myself?
Yes, the manual lists the cooking cabinet door seal as a part the operator can change. Air filter replacement, on the other hand, is left to a service technician.
