A row of three stainless steel reach-in cabinets with solid doors along the wall of a working restaurant kitchen, the reach-ins clearly the subject, one door open showing sheet pans of prepped vegetables on wire shelves, a walk-in cooler door with a clear strip curtain visible at the far end, a cook seen only from behind in a white jacket passing in the soft background, bright even kitchen light.

True Residential commercial appliances,
specifically.

True Manufacturing, family-owned for four generations and based in O'Fallon, Missouri, builds reach-ins, prep tables, undercounters, worktops, chef bases, merchandisers and heated cabinets for restaurants and stores. Most True calls we take are reach-ins and prep tables drifting warm, and the first job on site is identifying which control the unit carries, because True's display codes change with it.

The True Residential lineup

What is particular
to True Residential.

We work on True top- and bottom-mount reach-ins, pass-thrus, roll-ins and roll-thrus, sandwich, salad and pizza prep tables, undercounters, worktops, chef bases, glass door merchandisers and heated cabinets. True ice machines go to our ice machine service.

Several control makes, one guide

True fits electronic controls from Carel, Danfoss, Dixell, LAE and Sollatek, as well as mechanical thermostats, and documents them all in one general control guide. The same warm alarm can read HI, Hi, hi or HA depending on the control, so we identify the control before we read a code.

Blinking lights instead of letters

Some True cabinets have an electronic control with no display. On the Danfoss version an LED blinks in two blocks, and the count tells the story: one flash then three is the condenser alarm, three then one the leakage alarm.

Set points from the factory

True sets its controls to hold about 35°F in a cooler and about -10°F in a low-temperature cabinet, and asks owners to let a unit run for several hours before changing anything. Its guide also warns that frequent fiddling with the control leads to service trouble.

Heated cabinets beside the cold line

True also sells heated cabinets in reach-in, pass-thru, roll-in and roll-thru formats. On those, a visit is about heating elements, the thermostat and door seals rather than a compressor.

Parts

True sells original parts through its own online parts store and says its domestic parts inventory is kept for a fast turnaround. Probes and controls must match the control make fitted, so the serial tag and the control label are read before anything is ordered.

Repair or replace

A True cabinet with a sound box, hinges and gaskets is almost always worth repairing when a probe, fan motor, control or door switch fails. We put a new cabinet on the table only when the compressor or sealed system fails on an older unit whose box is also worn.

Questions about
True Residential commercial appliances.

How do I tell which control my True has?
Look at the face of the control and the serial tag inside the cabinet. True's guide shows each control make by its front panel, and we match the codes to that section.
What temperature should a True reach-in hold?
True ships coolers set to about 35°F and low-temperature cabinets to about -10°F. Give a new or moved unit several hours to settle before adjusting it.
Why does my True show dEF with the temperature rising?
During defrost the compressor rests and the air warms slightly, and True notes the display can take a short while to show the temperature again. A dEF that lasts for hours with a warming cabinet is when to book a visit.
Do True heated cabinets show the same codes?
They use their own controls and do not share the cold units' alarm list. Tell us the model number from the tag and we bring the right information.
