A working restaurant cooking line under a stainless ventilation hood, two stainless gas fryers with baskets hanging above the oil, a flat griddle and a combi oven with a glass door beside them, the equipment clearly the subject, a cook seen only from behind and shoulders down at the far end of the line, warm kitchen light, small blue flames visible under the griddle.

Wolf Commercial commercial appliances,
specifically.

Wolf commercial equipment, a division of the ITW Food Equipment Group made alongside Vulcan, covers the restaurant cooking line: Challenger XL ranges, charbroilers, griddles, cheesemelters, WF gas fryers and WC4 convection ovens. It is a different company from the Wolf residential ranges sold with Sub-Zero, and it takes different parts.

What is particular
to Wolf Commercial.

We work on Wolf Challenger XL restaurant ranges, ACB and SCB charbroilers, AGM and ASA griddles, cheesemelters and salamanders, WF300 and WF400 gas fryers, and WC4 gas and electric convection ovens. Many Wolf griddles and charbroilers share designs with Vulcan models, which helps with parts.

Not the home Wolf

Wolf commercial equipment comes from ITW's food equipment group, not from Sub-Zero Wolf. We confirm which Wolf it is from the data plate, because the parts, manuals and repair steps do not cross over.

Standing pilots with a safety

Challenger XL range ovens and thermostatic griddles use a standing pilot watched by a thermocouple and safety valve. If the pilot goes out, the valve shuts gas to both pilot and burner, so a cold oven often starts with a pilot that will not hold.

Fryers that shut themselves down

WF gas fryers carry a high-temperature shutoff that closes the gas valve and puts out the pilot if the shortening overheats. Wolf says not to relight until the oil is below 300°F, and a repeat shutdown means the thermostat needs checking.

A red light on the gas oven

WC4G gas convection ovens flash a red IGNITION light while lighting and hold it on if the burner fails. That one light narrows the problem to ignition and gas supply before we open the oven.

Parts

Thermocouples, safety valves, thermostats, ignition parts and fan motors are ordered by the Wolf model and serial number. Parts shared with Vulcan equivalents are usually easy to source.

Repair or replace

Wolf line equipment is built to be serviced, so a failed thermocouple, thermostat or valve is routinely repaired. A cracked griddle plate or a rusted-through oven cavity is where replacement is worth comparing.

Questions about
Wolf Commercial commercial appliances.

Is Wolf commercial the same company as Wolf home ranges?
No. Wolf commercial equipment is a division of ITW Food Equipment Group; the residential Wolf brand belongs to Sub-Zero. Parts do not interchange.
Why did our Wolf fryer shut off and the pilot go out?
The high-temperature shutoff reacted to overheated shortening. Wolf says to wait until the oil is below 300°F before relighting, and to book service if it happens again.
Why does the red light stay on on our Wolf convection oven?
The burner did not light. Wait five minutes, check the gas supply is on and retry up to three times, then book a visit.
Do you repair Wolf charbroilers and griddles?
Yes. We service their burners, valves, pilots and thermostats, and many share parts with Vulcan models.
