A working restaurant cooking line under a stainless ventilation hood, two stainless gas fryers with baskets hanging above the oil, a flat griddle and a combi oven with a glass door beside them, the equipment clearly the subject, a cook seen only from behind and shoulders down at the far end of the line, warm kitchen light, small blue flames visible under the griddle.

What is particular
to Garland.

Most Garland calls involve G Series and Master Series restaurant ranges, Master Series convection ovens, XPress grills and griddles, broilers and counter induction units. Garland's convection oven line is presented together with the US Range Summit Series, which we service the same way.

Induction that counts in flashes

Garland induction hobs, woks and griddles report problems either as a code such as E04 on a display or as one long flash followed by short flashes on an indicator lamp. Counting the short flashes gives the same answer as reading the display.

Cool air in, clean filter

Garland asks for induction units to draw intake air below 104°F and for the air filter to be cleaned. Many E03, E06 and E21 codes come down to a clogged filter or hot air from a neighboring broiler.

Ignition that locks out

On Master Series gas convection ovens the spark ignition makes three cycles of four-second attempts before the module locks out, and the oven must be switched off and on to try again. Opening the door also stops the heat and the fan as a safety feature.

Two-sided grills with moving platens

XPress grills lower a heated upper platen onto the product and raise it automatically when time runs out. Garland warns that adjacent platens can move unexpectedly, so the main switch should be off during cleaning.

Parts

Garland thermocouples, pilot assemblies, spark modules and gas valves are ordered from the data plate on each piece. Induction generators and XPress platen parts are specialty items with longer lead times than burner parts.

Repair or replace

Garland ranges and convection ovens use serviceable burners, valves, thermostats and ignition parts, so most failures are routine repairs. On induction units, a failed generator on an older hob is when comparing the repair with a new unit makes sense.

Questions about
Garland commercial appliances.

Why does my Garland induction hob show E01 with a pan on it?
E01 first points to a pan the zone cannot heat. Try a flat pan made for induction; if E01 stays with good cookware, the coil connection needs a technician.
My Garland convection oven won't light after three tries. What now?
The ignition module has locked out. Turn the oven off and back on to restart the ignition sequence; if it locks out again, check that the gas valve is open and book a visit.
Can I clean an XPress grill with the power on?
Garland advises turning off the main switch before cleaning the platens, because an adjacent platen can move without warning. Let the surfaces cool before scraping.
