A stainless door-type dish machine in a busy restaurant warewashing station, its hood half raised with steam rising, a green plastic rack of clean white plates sliding out onto the clean-side table, the dish machine clearly the subject, a worker seen only from behind and shoulders down in an apron at the soiled side, bright even kitchen light.

Hobart
Restaurant Equipment Repair

A Hobart dish machine that stops holding its rinse heat is usually seen right after the lunch racks clear, so the tank can drain and cool.

Hobart commercial appliances,
specifically.

Hobart, based in Troy, Ohio, is best known in restaurants for its dish machines: LXn undercounters, AM16 door-type machines, CL conveyors, FT2000 flight-type systems and PWn pot and pan washers. On this site we cover that warewashing line; Hobart's mixers, slicers, food processors and scales are food prep equipment outside our four repair groups.

What is particular
to Hobart.

Most Hobart dish calls are LXn and LXGn undercounters and AM16 door-type machines, with CL conveyor, FT2000 flight-type and PWn pot and pan machines in larger kitchens. Centerline by Hobart door-type and undercounter machines are a separate, simpler line with their own manuals.

Three-digit codes with a sentence

LXn and LXGn undercounters show a three-digit number with plain text, from 003 for a slow booster to 080 for a delime lockout. Some clear with ENTER, others need the power button held for five seconds, which also drains the machine.

Delime reminders that can lock the machine

The control schedules deliming from its water hardness setting and prompts the operator. If the prompt is declined ten times with the lockout enabled, the machine stops with 080; Hobart recommends water at 3 grains per gallon or softer.

Hot-water or chemical sanitizing

LXnH, LXnR and LXGnR models sanitize with a 180°F final rinse from a built-in booster, while LXnC and LXGnPR models use a bleach solution at lower temperatures. The model letter tells the inspector, and us, which numbers apply.

A machine with its own app

LXn machines have built-in WiFi for the Hobart SmartConnect app. A message about the cloud connection means only that link is down, not that the machine has stopped washing.

Parts

Hobart wash and rinse pumps, heater contactors, pressure sensors and touchscreens differ between LXn versions, so the serial number is read before anything is ordered. Chemical pump tubing and strainer parts wear with use, and we look at them on every visit.

Repair or replace

A Hobart dish machine with a sound tank and door is nearly always worth repairing when a pump, heater, sensor or board fails. Heavy lime inside the booster, or a tank damaged by years of the wrong chemicals, is when replacement becomes worth considering.

Questions about
Hobart commercial appliances.

What temperatures should a Hobart undercounter reach?
On hot-water sanitizing LXn models Hobart lists a minimum 150°F wash and 180°F final rinse. Chemical models run at 120°F for both and rely on the sanitizer instead.
Why does my Hobart ask for a delime every few weeks?
The interval comes from the water hardness setting and how much the machine runs. Hard water brings it sooner, and Hobart asks for water treatment above 3 grains per gallon.
Does this site repair Hobart mixers and slicers?
No. Those are food prep machines, outside the four equipment groups this site covers. We repair Hobart dish machines, including their built-in boosters.
What incoming water does a Hobart LXnH need?
The LXnH booster adds about 70°F, so Hobart expects an incoming supply of about 110°F. The LXnR and LXGnR are built for cold water and recover heat internally.
